VEGAN FRIDAY!

I have been really into talking and sharing my Vegan-ness more openly. Currently I am working on a 6 week vegan challenge. That is basically a compilation of all the info I wish I had when I first went vegan. there are so many misconceptions about Vegans and it’s taken my a while to sort thru the BS. There is active anti-vegan propaganda.

I want to battle that by making generally delicious food.

I had some fun this weekend cooking a new dish I never thought I would cook. I was talking to my roommate about my Boyfriends Birthday, complaining I couldn’t really make him a special meal because he isn’t into food. And I said “I mean his favorite dish is Butter Chicken and it’s not like I could make that Vegan.” And I held that belief so firmly. Why did I so adamantly believe I couldn’t make this dish vegan?

Thinking about my words and how final they were, I was like what the heck did I just say? So anyway I made VEGAN Butter Chicken. And I have never had butter chicken, but it was freaking delicious.

I inadvertently made the healthy version…. I didn’t have coconut cream so I used Oat cream that was in the fridge and I didn’t have tomato paste so i used fresh tomato juice my friend had given me.

It’s a super easy recipe:

Cut up a block of tofu. Pre heat the oven to 350 degrees. Cut up the tofu to desired size then oil a baking sheet. Mix tofu with coconut aminos or soy sauce, some salt and 2 tablespoons of cornstarch. Mix it up and spread tofu on a baking pan and stick it in the oven and forget about it.

Take as much butter as you have, I had half a cup of vegan butter, carlic and half a chopped onion and I sauteed that on a medium heat in a big sauce pan.

I then freaked out because I did not have masala seasoning. So I used curry, rosemary, cinnamon, allspice, garlic powder and clover, which is like an approximation of Masala. I just kept adding bits till it tasted right, then I added the tomato juice and the heavy cream I stirred it really good and then let it hang out on a low heat with a lid.

Then I made white rice. I cheated and used instant rice.

Then I took the tofu out of the oven and mixed it into the sauce and then served it over rice and my boyfriend said it was REALLY close to Butter Chicken and he loved it!

BIG VEGAN SUCCESS! Tasted freaking amazing and no onw had to die for our taste buds!
